The Danish-UK Chamber of Commerce has used Madsen Food who is a member of the chamber on several occasions, both in serving canapés and making buffets. Miss Madsen has always been very professional in her work with us and made delicious canapés that always resembled the Danish food culture. Det kolde bord
The Danish kolde bord (translated, the cold table) corresponds to its Swedish counterpart, the smorgasbord (in Swedish, Smörgåsbord). It is usually served at lunch time. The first course will usually consist mainly of fish (smoked salmon, gravlax, Greenlandic prawns, caviar, herring etc.). The second course can be of both cold and warm dishes as listed beneath and is followed by desserts of the season. The buffets are served with fresh and authentic rye and sourdough bread.
Madsen Food's Kolde Bord menu
Our buffets are all served with Danish rye bread, light rye bread and variations of sourdough bread. Our bread is baked with organic stone ground flour and with no commercial yeast.
To start with
As a first course one will in all likelihood eat pickled herring or another herring dish. The most common herring is marinated either in a clear sweet, peppery vinegar sauce (white herring), or in a red seasoned vinegar (red herring).
It may also come in a variety of sour cream-based sauces, including a curry sauce which is very popular.

- Danish curry salad with egg, apple and pickles -( to go with the herring) (v)
- Spiced (Matjes’) herring with crème fraîche and chives
- Fish platter with smoked salmon, Gravlax, Greenlandic prawns, caviar and crayfish - accompanied with sauces, dill and lemon
- Hard boilded eggs topped with prawns, seasoned mayonnaise and dill/ or Kalle's Kaviar
- Crayfish with lemon mayonnaise and dill
- Swedish tunnbrödsruller – pickled herring, crème fraîche and chives/ salmon and dill
Herring is usually served with ice cold snaps, which according to Danish tradition, helps the fish swim down to the stomach.

- Potato salad with crème fraîche and dill/or chives (v)

- Baked celeriac with dates, walnuts and mint (v,n)
- Balsamic honey roasted root vegetables (v)
- Baked tomates with goat cheese and honey (v)
- Greek salad with cucumber, cherry tomatoes, olives and feta cheese (v)
- Beetroot and capers salad with balsamic vinegar dressing (v)
- Green beans with red capsicums, apple and caramelised walnuts (v,n)
- Mixed green salad with spiced nuts (v,n)
- Green salad of baby spinach and rocket with feta cheese and capricums (v)
- Chicken with grilled lemon, rocket and olive pasta salad
- Smoked salmon and dill pasta salad
To finish off with...
- Cheese lover's tray with grapes and crackers
- Old fashioned Danish apple cake with whipped cream
- Double chocolate mousse with white chocolate shavings
- Seasonal almond fruit tart (pear, apricot, rhubarb, apple etc)
- Selection of cakes (carrot with glazing, lemon and rosemary, brownie etc)

Christmas Buffet
A special variation of det kolde bord is the Christmas lunch. A traditional julefrokost is a family event on
Christmas day or shortly after. However, during the whole of December all groups of people (coworkers, members of clubs and organizations) generally have their own annual julefrokost. The "lunch" may include music and dancing, and usually continues into the very early hours of the morning with plentiful drinking either on the premises or in after-hour bar tours.

Canapés
We do canapés for store openings, business and networking events as well as, private parties.
