About Madsen
Madsen was started by Danish ex-pat Charlotte Madsen. She missed real Scandinavian food when she moved to London. Her longing for marinated fish, fresh seafood, whole grain bread and liver pâté, prompted her to do something about it. Strangely enough, Charlotte found inspiration in her own name; "Mad" actually means food in Danish. She set up Madsen, her Scandinavian catering company in 2006.
Charlotte trained at Restaurant Ida Davidsen in Copenhagen, an establishment renowned for its Danish fare, where she learned to produce quality Smørrebrød. Prior to this, she studied at Ecole Hotelière de Lausanne, Switzerland, with work experience in five star hotels in Monaco, Paris and Brussels. Since graduating, Charlotte has worked in contract catering for companies such as Barclays Bank, the Financial Times, Pearsons and L'Oreal in London.
